Cheesecake

One of my funniest ‘growing up’ memories involved cheesecake. My mother loved to cook, including creating all kinds of desserts. But for some reason, she never baked a cheesecake. So, when I was a teenager and heard of cheesecake for the first time, I thought it sounded disgusting, as in cheese-plus-cake. Ugh! 

Then of course, one of my friends forced me to try it and it was instant love. I still look back and recall how many times I refused to try cheesecake only to find out how fabulous it was. Makes me smile every time. Are you a fan of cheesecake? 

Here is a short, excellent video on how to make a cheesecake very similar to the original Cheesecake Factory cheesecake. Good luck and yes, I’ve got to try this one! In this slightly longer video, Martha Stewart and her mother make a kind of cheesecake made with Farmer’s Cheese. I had to look this up and on one website Farmer’s Cheese is described as a cross between cream cheese and ricotta cheese, which I thought sounded very interesting. Have you ever tried it? Finally, here’s a short video featuring a no-bake cheesecake that uses mainly cream cheese and whipping cream as the filling. I’d love to know if anyone has tried this one and what they thought! It would be worth a shot given how easy it is to make, but it does have to be refrigerated overnight!

  • Here’s a basic description of cheesecake, quote: Cheesecake is a sweet dessert consisting of one or more layers. The main, and thickest layer, consists of a mixture of soft, fresh cheese (typically cream cheese or ricotta), eggs, vanilla and sugar; if there is a bottom layer it often consists of a crust or base made from crushed cookies (or digestive biscuits), graham crackers, pastry, or sponge cake. It may be baked or unbaked (usually refrigerated). Cheesecake is usually sweetened with sugar and may be flavored or topped with fruit, whipped cream, nuts, cookies, fruit sauce, or chocolate syrup.   • The earliest mention of cheesecake is from Ancient Greece. Archaeological records indicate it’s been made since 2000 BC.
  • A more modern version appears in an English cookbook in 1390 AD.
  • The cheesecake as we know it today emerged in the 18th century when chefs stopped using yeast in the recipe and added eggs instead.
  • On the 21st of September, 2013, the largest cheesecake ever made was unveiled in Philadelphia. It weighed 6,900 pounds and had a diameter of over seven feet.

  1. I love cheesecake! My favorite cheesecake is one I had while visiting Hawaii at a little shop called Otto Cake. They have different flavors each day, but I tend to stick to the tried and true original flavor. I’ve only ever tried to make a sous vide cheesecake, but I might have to try a normal style recipe.

  2. My introduction to cheesecake was pretty much like yours. Now I have to stop myself from eating too much.

  3. My daughter makes a luscious White Chocolate Raspberry Cheesecake. Not often but so worth the wait! Your cheesecakes all made me soooo hungry! I really like the unbaked ones made with cream cheese. Yummmo!

  5. I don’t recall running into anyone who does NOT love cheesecake! My staples are plain with cherry topping. My favorite is pumpkin cheesecake. We tend to bring that out around the holidays. I have really never met a cheesecake I didn’t love.

  6. I watched your videos, I looked at your pictures. I’m thinking ‘what would be the ultimate cheesecake for me?’ Maybe butterscotch or caramel or both. What about kiwi fruit? Is there such a thing as red velvet cheesecake or German Chocolate Cheesecake? I’m drowning here in potential tastes. Ok, Ok, They all are the Ultimate Cheesecake.

  7. I love love love cheesecake and it is one of my specialties. I can make any type of cheesecake. I do an irish cream chocolate cheesecake that is as my Fiance puts it, it’s “crack on a plate”. Cheesecakes are fun to make also. You can do so many interesting things with them.

  9. I am in love with cheesecake. LOL I have made one from scratch. It was New York style and poured a chocolate ganache over it. It was soooooo good. I haven’t done any in awhile, but now I might have to make one.

  10. Oh my gosh – CHEESECAKE HEAVEN!! I absolutely LOVE cheesecake. My Mom made the best New York Cheesecake topped with Blueberries or Strawberries. Always had with the graham cracker bottom crust. Oh, it’s heaven!! I’ve had it since I was small – a long time. My favorite picture is #8, which looks just like the one my Mom always made. All of the pictures are just YUMMY!! AZ

  14. Love cheesecake. I use to make a NY cheesecake with cookie dough crust and rich filling, baking it in a springform pan. Sooo rich and creamy but way too many calories. Now I treat myself to this dessert once in a great while. Love it with any kind of berries.

  15. Big fan of cheesecake, I like drizzling chocolate syrup on the plain kind. I used to love getting the Sara Lee frozen cheesecake bites, but I don’t think they sell them anymore. Those bites with the sliced strawberries on top look awfully good!

  20. Yes, there is red velvet cheese cake. I had it once and it was yummy. I make a white chocolate cream cheese cake that will make your mouth water. I have not met a cheese cake i didn’t like.

  21. I absolutely love, love, love Cheesecake! Unfortunately, Cheesecake does not love my figure :). I can remember when I was very young going to the town bakery and getting a slice of Cheesecake (we could not afford a whole cake and mama was not an experienced baker). It was a treat after Church on Sunday to go to the Bakery and pick out a slice. That would be a treat for me! As I got older, I accompanied my mom to the mall for shopping after Church (we left my father home to sleep in the recliner) and we would order a slice of Cheesecake and coffee and sit and talk and that would continue until her death from cancer. It’s one of my sweet memories of our together time–bonding over coffee and Cheesecake. I don’t do it any longer without her, but occasionally when I eat a slice of Cheesecake it takes me back to a simpler, pleasant time. I don’t have a personal favorite flavor as I like to think of each slices as colors on the rainbow! Thank you for listening to my story.

  22. I love the no name cheese cake. The baked ones I’ve tried have a funny kind of after taste to me. I’ve never tried baking one been to scared to try lol. All the photos look wonderful !!!

  24. Love cheesecake, I have made several no bake recipes, the best cheesecake I have had my sister in law makes with dream whip and blueberry topping on top.

  25. I remember having yogurt fruit pie with one of my best friends years ago. We’d have it with coffee with a tasty measure of Kahlua in it. Miss those days.

  27. I love cheesecake. From the first taste to the last crumb. I agree, when you have food together, a meal or snack or just finger foods, it brings people closer. My hubby and I shared many close moments with food involved. We were driving from NJ to GA and we stopped at a diner and had A Reuben sandwich and rum cheese cake at 3:00am. Oh my, it was heavenly.
